From Information to Understanding in Food Policy: Japanese Consumers’ Perceptions of Domestic Beef and Feed
Profile
Ryosuke Kikushima is an Associate Professor at the Department of Food Environment Economics, Faculty of International Agriculture and Food Studies, Tokyo University of Agriculture, Japan. He received his B.A. from Utsunomiya University and M.A. and Ph.D. in Agriculture from The University of Tokyo. His research focuses on agricultural and food economics, particularly food systems, farmers’ markets, rural marketing, and consumer behavior in food supply chains. Prior to his current appointment, he worked as a Researcher at the Policy Research Institute, Ministry of Agriculture, Forestry and Fisheries of Japan. His research has investigated the competitive dynamics of direct agricultural markets and the socioeconomic roles of regional food systems. Dr. Kikushima has published numerous articles and contributed to interdisciplinary research on food systems and consumer behaviour, including studies assessing how information affects consumer engagement with food and agricultural policy issues.
